Vegan Avocado Chocolate PB Pudding

       This is my favorite recipe, considering it is the one recipe I made about once a week while not a vegan, and now, of course I make all the time while I am one. It's amazing that it is actually good for you? I know right? It's basically like magic skin food. Here goes:



For the pudding:
2 ripe avocados
1 ripe banana
1/2 cup raw cacao or unsweetened coco
1/2 cup creamy natural peanut butter
1/4 cup agave or maple syrup (or honey if not vegan)
1/3 cup almond or soy milk (1/2 if you want it a little less thick)

Put all the ingredients in a food processor & run for about 1 minute. Done!


For the coconut whipped cream:
1 can of full fat coconut milk (make sure it's full fat)
1 tsp. vanilla extract
1 tsp. stevia or maple syrup (or honey if not vegan)

Open the can of coconut milk and make sure to scoop out only the hard part. The milk can be discarded used for something else. Put in a bowl with the other ingredients and whip until fluffy.
* If you got a dud can of coconut milk, the entire thing will be runny and not stiff. Put all of this in a bowl and whip. This is fine too, but it will turn out like more of a drizzle than whipped cream. Still tasty, don't fret!

After all this is done, serve with a drizzle of peanut butter on top.

  1. Have you tried banana ice cream yet? You just blend frozen bananas with whatever flavors you want to add (like cacao powder, strawberries, vanilla extract, etc) and it tastes just like ice cream. Suuuuper yummmm.

    1. I have actually! It's one of my favorite things to make when I have extra bananas. I've done chocolate peanut butter with that too. Sooo good

  3. This looks like it will be soo yummy! I have a lot of extra ripe avocados, I now know what I make with them. I made the Kale Soup you wrote about earlier and it was absolutely delicious. You kind of jump started my vegan experience. Thank you!

  5. Thanks for the recipe! A new favorite of mine, btw when you get your hair cut do you need it thinned out? In other words I have really thick hair (aka having to hold my hair with 2-3 hair ties gahh!) and I've been wanting to do this major cut but I feel like the blunt cut would possibly be all over the place. Tips?

    1. No I actually keep it blunt and not thinned. My hair isn't very thick, so I need all the help I can get.

      In your case, I would get it thinned. I know people with thick hair, like Drew Barrymore, who have had bobs look liked they have it thinned at the ends :)

  7. Looks so yummy! I'm not a big fan of cacao though... but I really want to try this! Is there any way I could replace the cacao with another ingredient?
