Vegan Breakfast Glow Bowl

Vegan breakfasts can admittedly become monotonous. I'm a victim myself of making a bowl of oats and throwing whatever is around in with some almond milk every. single. day. There's nothing wrong with it, but it's healthy and stimulating to switch it up a couple times a week.
That doesn't mean the new thing has to be difficult to make or require a slough of new ingredients. It can just mean blending up those same ingredients and using a little more of "this" and a little less of "that".

Today I decided to do just that. For this smoothie bowl, I didn't use anything that isn't typically in my pantry, and honestly you don't have to use the exact same toppings I used here when you decide to make the smoothie bowl base. I do suggest a mix of nuts/nut butter, fruit, and seeds to stay full, but use your own favorites!

Here is what I used for the simple smoothie base:
  • 3/4 cup almond milk
  • 1 Tbsp peanut butter
  • 1 Banana
  • 4 dates or prunes

For a thicker base, add 1 more prune and 1/2 Tbsp peanut butter. Put everything in a blender and blend until smooth. Pour into a bowl and add toppings.

Here I topped with a hodgepodge of ingredients, but it turned out quite yummy!
  • Crumble of dark chocolate chunks and walnuts
  • 1/4 cup granola cereal
  • 1 Tbsp chia seeds
  • 1 Tbsp peanut butter ("all natural" is usually kind of runny and drizzles over nicely)
  • 1 tsp fig jam
  • 1/4 cup mix of sliced grapes and peaches
