Vegan Spiced Morning Rice Porridge

A yummy morning treat that is both filling and wonderfully aromatic. This seemingly simple rice porridge is enhanced by some really powerful active ingredients.
Turmeric is renowned for it's anti-inflammatory and blood detoxifying properties. Lovely cardamom is packed with minerals and is an ancient aphrodisiac. Cacao boosts endorphins & promotes joy, and walnuts are an amazing brain food! You can interchange the toppings, but I highly recommend this spice combination. (& don't forget the black pepper - it increases the body's absorption of the turmeric by up to 2000%).

Serves 2 -
1 c. brown rice
2 c. water
3/4 c. sweetened almond milk
2 tsp. agave or maple syrup
1/4 tsp. turmeric
1/4 tsp. cardamom
1/4 tsp. cinnamon
1/8 tsp. black pepper
1 banana, sliced into coins
Toppings: shake of cacao nibs, coconut shavings, walnuts, & chia seeds

Bring brown rice and 2 c. water to a boil in a small pot. Reduce heat and let simmer, covered, for 45-50 minutes. (Don't stir until 45 minutes is up). Once rice is cooked, add almond milk, agave, and all spices to the pot. Stir, cover, and let stand on low heat for 10 minutes, or until the liquid is mostly absorbed and the rice looks sticky.

Top with banana coins, cacao nibs, coconut, and walnuts. If you have other toppings at home you think would taste yummy, add those! I also add a splash of almond milk over the top. Enjoy!

  3. I made this and it was really good!! It was a nice change from my mums very dairy and sugar-heavy version of sticky breakfast rice. Personally I am used to a lot of sugar in my breakfasts so this could have had a little more sweetness but it's really good if pure trying to cut down on sugar (which is always something we could have less of)
